I love this pan except that I have had to be careful what I cook in it. It's good for braising and for slow baking but it can be difficult to clean at times. Food particles can collect in the honey comb pattern on the bottom of the pan and they can be difficult to get out. Using plenty of moisture when cooking with this pan is key. The points in the lid of the pan help distribute the moisture back to the food. The pan is a nice weight and I prefer the side handles over a long pan handle. The handles don't take up any space so it's easy to use on the stove, in an oven, and make it very easy to store the pan without worrying about needing space for a long handle to take up. All in all, I am happy with this pan.

This review is for the 10" pan. I bought it due to the reviews, but wish I didn't discount the negative. Everything sticks to this pan regardless of every precaution that was taken. Making eggs in it is a nightmare. I tried preheat the pan, add olive oil, wait for it to be heated and then add eggs/veggies - and eggs would stick without fail. I initially bought this pan because of stick-to issues with my All-Clad stainless pan, but the improvement was minimal. In contrast, nothing stuck Calphalon commercial griddle my parents own without any sort of pre-treatment, so will look to get that once it goes on sale on Amazon.

I purchased a regular cast iron skillet prior to this one and was going thru the process of building up the seasoning for the non-stick effect when I came across this skillet on sale at Amazon.

The enameled bottom interior cuts the seasoning time and the wood handle makes the pan far more usefull than the Lodge Logic I had purchased earlier (still a good pan). This sits on top of my gas stove for daily, multible use. Try using a lower heat setting and realize that the pan will "season" as time goes on. Be carefull in cleaning -no harsh soaps or excessive scrubbing as it will reduce the seasoning.



I gave it 5 stars not because it is without fault but because it satisfies my needs and the reasons I bought it.

Gripe? yeah, well, there were no instructions with the pan - no care or cooking quidelines. There should have been at least a page. But go on-line to Staub and get your own.

Before I bought this pan I have read all the comments about the pan and finally decided to buy one since most comments were very good. Nice quality heavy metal but all the things I cook on this pan sticks on the pan. Cannot even cook an egg because it makes a big mess. I try to pre treat with oil and so on but it didn't help. Not sure I got a defected pan but I will never buy this pan again and I will not recommend to anyone. Also the picture need to be fixed since it is just one pan not a pair of pans.

This is a really great pan. I debated whether it was worth it (I paid more than many of the other reviewers) but knew that it was as soon as I opened up the box. Heavy, beautiful, really nice short handle with a great angle to it. Plus the pan is nice and deep, which is exactly what I was looking for. Very pleased with this. By the way, I have alot of Le Creuset as well and do love it. The Staub is equally good. I was always hesitant to buy this 'honeycomb' bottom, thinking that it would be difficult to clean and would make food stick more. Turns out that is not at all true.

CONS: Lid optional, but metal rimmed glass lids are readily available. Lid from Le Creuset 7-1/4 qt oven should fit or look for a lid at just under 12" diameter. Scorching of interior enamel possible if range top heat is exceeded far beyond any realistic temperature required for searing or browning meat. High efficiency! Use lower range settings, gradually increasing until you achieve the results desired.



CARE: Clean only with hot water and nylon or bamboo bush or "Tuffy". NEVER use abrasive powders or Scotch-brite abrasive pads. Detergent not required for cleaning. Some natural food oil residue is desirable for improved food release. However, sll oil residues can be easily removed at any time by heating 1/4 teaspoon of Dawn detergent in pot for 10 minutes. Re-seasoning is not required but cooking bacon or similar after total deep clean will improve food release properties.



HANDLE: The handle end cap is solid brass and can be unscrewed. The hollow hardwood handle may then be withdrawn. This exposes a stainless steel threaded stud which can easily be removed by hand for oven use or storage.



SPECIAL INTERIOR: The smooth "honeycomb interior enamel bottom" yields master chef branding on meats and veggies. Browning is even with no hot spots. Sautes mushrooms to an even golden brown without burning the edges. Crisps potato and veggie chips to perfection. Sears beef and browns browns poultry very well.



Doubles as a deep sided roaster with the handle removed for oven or broiler use. Or even a shallow fryer. I've roasted butternut squash, meats and veggies in the oven with handle removed. Braises very well if you have a lid. Ideal for "oven fried" lo-fat chicken and roasted veggies. The integral cast loop handle and main handle cast stub are very sturdy and make for easy removal from a hot oven. Oven safe to 600F w/o handle.



Sloping sides measure 3" deep to inside bottom for easy stir frying. Bottom marked "28" for 28 cm. Rim is aprox 11-1/4" wide, while the bottom is 10". Use lower temperatures than you think you need because this pan is highly efficient.



Cleaning is a breeze. Simply de glaze with boiling water to lift carbonized food and sauces. Ordinarily, you won't wash with detergent because the small pores in the interior matte finish absorb natural food oils with each use, gradually increasing the already close to non-stick performance. In the event that you burn tomato sauce, or otherwise gum it up, simply simmer with a cover in place and with a few drops of Dawn added to several quarts of water. Rinse and towel dry. Seasoning is not required. In the event that you ever wish to remove all the oils from the interior, simply use the Dawn method above. Never use scour pads or abrasive powders as this will roughen the enamel and reduce the food release capability. Ordinarily, all that is required is a quick rinse in hot water and perhaps a a stiff nylon brush followed by towel drying. Essentially maintenance free.



Deep frying is possible with a splatter screen. Avoid very high range settings, as in trying to pop corn, or the matte finish may be scorched. Any searing, browning or crisping which you desire will occur at low or medium low temperature settings owing to the pan's high efficiency.



INDUCTION PERFORMANCE: I combined my purchase with a Supentown portable induction hob for a revolution in convenience, safety, speed of cooking, automatic timed cooking. Bonus is complete "use-it-anywhere" operation. Eliminate indoor fish fry/stir fry odors by using on your the balcony.



I've tossed out my obsolete range/oven combination. I use the portable induction hob with the Staub at home or on the go. Induction heats this massive pan in less than one minute!! Try that on your gas or electric range!



The portable induction hob has precise temp settings and a timer which frees me to attend to other errands instead of standing over a hot stove. The Staub's cast iron keeps my dinner warm for a long time after cooking allowing me to write reviews like this and have my meal later!



This purchase should last generations and will save you money in the long run while freeing landfills from endless tons of disposable cookware. I couldn't be happier with the performance, ease of use and low maintenance. As this model is discontinued by Stab, grab one while you still can.

The picture I have provided is now correct.



The description still says it comes with a lid, which it does not. I am sorry the previous reviewer was disappointed by Amazon's error, but the pan is really gorgeous, I bet they kept it anyway.



It may be 10" at the bottom on the inside, but it is 11" at the top. My Berndes 11" glass lid fits perfectly.



I am extremely pleased with this purchase. It is very heavily built (7.5 pounds of enameled cast iron) and beautifully made in France. While it is not non-stick, my experience in searing steaks indicate it is a lot easier to clean than stainless steel or cast iron, and requires no seasoning.

We recently moved and installed an Induction Cooktop in our new Kitchen . . . I cook professionally, so I have used Induction previously, but only had a single hob countertop model . . . using Induction exclusively meant replacing all my older All-Clad and Calphalon with Induction-ready cookware.

Finding this Staub pan on amazon.com at this price was amazing . . . Staub is obviously superior to LaCreuset and Lodge (more consistent, better interior, nicer finish), and would be my first choice at full price, but at this price, it can't be beat. I made the mistake of picking-up a (China-made) cast iron skillet (similar to a lot of stuff on amazon.com and e.bay) to try-out the cooktop . . the results using it almost made me wish we hadn't gone with Induction . . . the first time I used this Staub results were great, and, as it seasons, will only get better.

Great product . . better price . .shipped in perfect condition in just 3 days (for free!).

I own two 11" Staub pans and two 9" pans. Simply the best. Their greatest strength is browning meat and sauteing vegetables. Caveat: You must understand how these pans take heat and break them in with a proper seasoning (not curing) a few times before using on a daily basis, especially if you want to do eggs. These pans should be in every home simply for what they represent in quality and performance.

I"m going to set forth the proper way to season and clean pans because I've never found one person who gets it right. First, enamel is porous and these pours must be treated a few times with oil so food doesn't deposit into the pours which eventually would damage the surface of the pans.

The seasoning process does two things. It deposits the oil in the pours but more importantly it teaches you about how the pans take heat. It creates a learning curve and brings you way up the curve. So don't dismiss the process.

Warm the pan on low heat and pour about 2mm of olive oil in the bottom of the pan and wipe it all the way up the sides with a rag. Add more oil if needed keeping 2mm in the bottom at all times. While massaging the warm oil around the pan with paper towel or rag be careful not to burn your fingers. Olive oil means olive oil. Low heat means your lowest setting. Do this for at least five minutes on low heat all the time massaging the oil all the way up the sides. You never want to smoke the oil because that means you are burning oil and depositing carbon in the pours of the pans. The oil should only shimmer a little. Now after five minutes turn up the heat to medium-low always keeping the oil massaged with the rag on the bottom and up the sides. The pours are still opening even though you are now bored with the process. After ten minutes turn off the heat and keep massaging the oil into the pan as it cools. Wipe dry and do not wash. Repeat at least one more time before cooking. Now, personally, after the two olive oil treatments I buy a whole duck and render duck fat in every pan I buy for the first cooked meal. I don't expect you to buy a duck but duck fat is the best fat you can season a pan with after you do the initial olive oil treatments. And it will put you at the top of the learning curve. Obviously the sickness runs deep with me. What you will learn during this process is how hot the pans get and you will notice a medium low flame on cast iron goes a very long way. Medium could almost be very hot and you will probably scorch food if you don't pay attention.

Always wipe dry with a paper towel and never pour water in a hot pan to deglaze. That forms tar in the pan which is gummy and eventually turns black. Oil is not water soluble so dismiss the deglazing myth. Once cool wash in warm soapy water and dry immediately.

In closing always wipe a tablespoon of olive oil in a cold pan before cooking and always wipe clean (as much as possible) while still hot. Only wash in warm water after the pan has cooled down to room temperature.

First order of business. People who complain of the weight of Staub cookware should not be allowed in the kitchen. Cast Iron has to be thick to distribute heat evenly, otherwise a thin bottom pan will cause scorching and burning. It's a shame we Americans have to be told that. Staub is the finest cookware made in the world. They stand against a world of trash products that are designed to be thrown away and repurchased just to be thrown away again.

Now the caveat.

This seasoning explanation is actually a response to a person who gave an uneducated one-star review on this pan that misleads the potential buyer. So, this is now my edited review and explanation.

There is a lot of very inaccurate information on seasoning pans and cleaning pans. First I'm going to make a logical statement that is supported by elementary chemistry. Like dissolves like, only oil dissolves oil. Let's proceed with that fact. Water, or deglazing by boiling water in a pan, does not clean a pan. It can't. Water cools the surface of a pans as it boils away forming thick layers of tar to form on the bottom of the pan. Yet people think this cleans the pan. The worst thing one could ever do to clean a pan is pour water in it. Interestingly enough, we all know this yet we proceed with our compulsion to pour water in our pans.

Below is a seasoning process that I do to break in all my enamel cast iron pans. I own a lot of Le Creuset and Staub. Over 20 pieces. I own and sell Vollrath non-stick cookware for a living and I do cook.



Now as a general rule of thumb this step should always be followed in all cookware every time you cook right before you cook as long as it does not violate or screw up a recipe.



1. ALWAYS wipe about a tablespoon of generic olive oil in a cold dry pan even if you are boiling water to make pasta. Why even if boiling water you are asking? So you don't get calcium rings at the water line and starch burns in the bottom of the pot. Use generic inexpensive olive oil because you are wiping it out of the pot. You are not adding flavor or calories to the food. And olive oil means olive oil. Not canola or vegetable oil. Don't be cheap. Don't be defiant.



2. Always wipe your pans with paper towel or a dry rag when you are done cooking while the pan is still hot to warm. Never let a pan cool before you clean it. Never. What's interesting is you think this is crazy yet you know unconsciously I'm right. Here's why. When grease and oil is heated it thickens and degrades. Solids form. That's why olive oil begins the cooking process with no cholesterol yet at the end of the cooking process you end up with cholesterol. Now, as the cooked oil cools it SOLIDIFIES at room temperature. I call it tar. A gummy tacky substance that continues to degrade and harden every day you cook it. Tar is not water soluble and must be scoured out of a pan. You knew that you just didn't connect the dots. After many cycles of cooking and cooling tar becomes black. Now it's mostly carbon. Carbon is what cover cast iron skillets. Carbon is not a nutrient. Carbon is a carcinogen. Moreover, the burned up protein and fat that comprise the black carbon crust of improperly cleaned pans bind to sugars in the blood in a process called glycation. Glycated solids in the body are the solids - or radicals - that cause the health problems in diabetics. It's not the sugar that hurts diabetics - it's what the sugar attaches to in the blood - denatured protein and fats - that causes blindness, neural myapathy, retinal damage, and demyalination of the nerve sheath. Tar is comprised of these denatured solids. The point is when sugar attaches to proteins and fats in the blood through the process of glycation the human body suffers insidious internal damage. It's an insidious process that you are not aware of until you are older and the process has gone too far. Keep tar and carbon out of your food. Not only will your pans work better so will you.



Now to the gory details of a proper seasoning process. It is a process so strap yourself in. Enamel is porous. If you burn food into enamel you are depositing carbon deep into the pours of the pan. These pans will not work very well if carbon sits in the pours. So, how do you prevent that? You must understand that cast iron does not need much heat to get hot. Always remember to use low heat to keep food from scorching. The seasoning process is actually teaching you about heat control as well as seasoning the pans.



Enamel MUST be seasoned properly despite Staub's claim they never need seasoning. You MUST follow this closely or it will not help. Warm the pans on low heat and massage olive oil (2mm in bottom of pan) into the enamel with a dry cotton rag being careful not to burn your fingers. Warm means warm, not hot. Olive oil means olive oil and duck fat means duck fat. No substitutions. Turn up the heat after a few minutes to medium low being careful to never smoke the oil. The oil should shimmer at most but not smoke. Smoke means tar and carbon are forming. If black or brown stuff comes off the pan onto your cloth you have tar on the pan and it must be cleaned using this method. Soap does not remove this. Like dissolves like. Oil dissolves oil. This seasoning process is NOT the curing done to cast iron but you are depositing oil deep into the enamel pours as you massage the oil into the pan and "gradually raising the temperature." Curing means you are deliberately leaving tar and carbon on cast iron to keep it from rusting. Curing only applies to cast iron, not enamel. You are opening the pours "slowly." If done too quickly you will burn oil and deposit carbon into the pours and you will hate cooking on these pans and rightfully so. Don't be lazy with this process or impatient. Do this for about 10 minutes minimum. Fifteen would be better. The process of slowly bringing up the temperature is "schooling you" on how these pans take heat. You cannot put a lot of heat into cast iron because they "hold" a lot of heat. Aluminum pans do not hold heat meaning they cool very rapidly in comparison. Now turn off the heat and let the pans cool at their own rate "all the while wiping the pans with olive oil." DO NOT WASH. Repeat this at least one more time minimum the next day. Have patience. Three times would be a charm.



Now, buy a whole duck. I don't care if you don't like duck and no, chicken will not be an adequate substitution. You don't have to eat it. You will learn from this process that duck fat is the fat of the gods. Cut the duck up into leg and thigh quarters and breast leaving the skin on. The skin must be left on. Set aside in a bowl all the fat and gelatin trimmed off the pieces not used. Now, take the pan and season it with two tablespoons of olive oil on low heat. Then once warm, not hot, add the duck fat and gelatin. Let it melt into the pan. Massage it into the pan just as you did the olive oil. Once the fat renders on low turn up the heat to medium low and add the meat. It should sizzle a little. Pay attention. Only a slight sizzle. Move the meat around the pan and render (melt) the fat out of the breast and legs. Get a feel for the heat as you move the meat. Remember only a light sizzling. We are not searing, we are seasoning. We are putting the highest quality fat into the pours of the pan. The manufacturer cannot season pans at the factory nor can they teach you about heat control at the factory. You learn to control the temperature of the pans in your kitchen. This is not about a duck dinner but you can eat it if you want. This process creates a learning curve and brings you way up the curve. If you "get it" in the end you will own and cherish these pans for a lifetime. Once you season the pans 2 to 3 times with olive oil and once with duck fat you will truly intuitively understand enamel pans. Enamel pans should only be washed in warm soapy water and immediately dried. Once dried they should have a beautiful sheen to them. Almost a shine or glow. NEVER SCRUB IN HOT WATER, NEVER SCRUB WITH HARSH ABRASIVES. The blue teflon safe scrubby only, never the green scrubby. Where you will go wrong is applying too much heat and not seasoning with olive oil before cooking. Always wipe olive oil into a dry cold pan before cooking. Never use Pam. Now that you have a better understanding as to how enamel takes heat you will be able to make eggs on low to medium low heat. I guarantee this process because it's what I do. The French do not make Enamel Cast Iron to spite the rest of the world. Our problem - being Americans - is we are not taught to cook because our parents, our culture, taught us nothing about the process of cooking. Specifically, heat control. I discovered this process on the job through mindless repetition doing my job. Then one day I got it and it all made sense. No one taught me this. I discovered it cooking 10 hours a day 10 days in a row 25 weeks year. Do the math.

I went with the overwhelming positive reviews (though all mentioned how heavy as it is cast iron). I thought I followed the seasoning directions but am going to try again.

The handle length does make the heaviness harder to handle. I am a good cook but not great nor do I cook all the time. So perhaps I should have known how much food sticks to the pan --- but it surprised me. Not too hard to clean if you soak.

I just ordered a nonstick hard andonized as I guess that's what i wanted and didn't realize. I did not send back since I got a great deal; too heavy; shipping costs make it not worthwhile.

I have not used this pan yet but I'm sure that like all my other Staub products that it is Second to None in it's Awesome cooking at low temps and super easy clean up. My wife has completely switched to staub cookware after I converted her to this great cookware. We have a gas stove that is fueled with propane and prior to using this cookware bringing a big pot of water to a boil and then maintaining it was pretty much not possible. This crepe pan is fantastic. With some hot oil seasoning it took about 4 or 5 uses to get a very nice non-stick surface. It's built like a tank, I can see why staub offers a lifetime guarantee on their products. It also came with a wooden spreader and a wooden spatula which work well. I use it on a ceramic surface stove with no issues. I can't imaging making thin crepes without it now.

This pan is fantastic, I love enameled cast iron. It's easy to clean, holds a lot of heat & with a little butter, is practically non-stick.



I've used it plenty of times for crepe's. Before I got it, I used my frying pan (worked OK, but the lip got in the way), now thinks are easier & the cast iron makes the temperature control more reliable (I have an electric stove) and the crepes more consistent. If I had a gas stove and all the $$$ in the world, I might try one of those fancy copper crepe pans, but I doubt they'd be much better than what I get now.

I am used to cooking pancakes in a non-stick aluminum pan. We're having trouble adjusting to the black iron pan. I know that black iron is better with more even heat and is also nonstick once well seasoned. So far we've used the pan 3 times and are still getting 'stuck' though the last time was much better using a good bit of oil between pancakes. I can easily see this becoming our favorite pan. However, if you like to roll the pan around to spread your batter for crepe pancakes, this pan is kinda heavy but it can still be done.

I love this pan except that I have had to be careful what I cook in it. It's good for braising and for slow baking but it can be difficult to clean at times. Food particles can collect in the honey comb pattern on the bottom of the pan and they can be difficult to get out. Using plenty of moisture when cooking with this pan is key. The points in the lid of the pan help distribute the moisture back to the food. The pan is a nice weight and I prefer the side handles over a long pan handle. The handles don't take up any space so it's easy to use on the stove, in an oven, and make it very easy to store the pan without worrying about needing space for a long handle to take up. All in all, I am happy with this pan.

This review is for the 10" pan. I bought it due to the reviews, but wish I didn't discount the negative. Everything sticks to this pan regardless of every precaution that was taken. Making eggs in it is a nightmare. I tried preheat the pan, add olive oil, wait for it to be heated and then add eggs/veggies - and eggs would stick without fail. I initially bought this pan because of stick-to issues with my All-Clad stainless pan, but the improvement was minimal. In contrast, nothing stuck Calphalon commercial griddle my parents own without any sort of pre-treatment, so will look to get that once it goes on sale on Amazon.

I purchased a regular cast iron skillet prior to this one and was going thru the process of building up the seasoning for the non-stick effect when I came across this skillet on sale at Amazon.

The enameled bottom interior cuts the seasoning time and the wood handle makes the pan far more usefull than the Lodge Logic I had purchased earlier (still a good pan). This sits on top of my gas stove for daily, multible use. Try using a lower heat setting and realize that the pan will "season" as time goes on. Be carefull in cleaning -no harsh soaps or excessive scrubbing as it will reduce the seasoning.



I gave it 5 stars not because it is without fault but because it satisfies my needs and the reasons I bought it.

Gripe? yeah, well, there were no instructions with the pan - no care or cooking quidelines. There should have been at least a page. But go on-line to Staub and get your own.

Before I bought this pan I have read all the comments about the pan and finally decided to buy one since most comments were very good. Nice quality heavy metal but all the things I cook on this pan sticks on the pan. Cannot even cook an egg because it makes a big mess. I try to pre treat with oil and so on but it didn't help. Not sure I got a defected pan but I will never buy this pan again and I will not recommend to anyone. Also the picture need to be fixed since it is just one pan not a pair of pans.
