 "great little dutch oven" 2009-12-04
By bookmark momma (deep in the heart)
These 2 pots are the best things in my kitchen ! I bought 2 this size on sale at Sur Le Table before the holidays and they saved the day I told my husband we could relax because the food would stay warm while he chatted and let the turkey rest before carving ( Usually I am saying -"shhh Quit talking!! Go carve before everything is stone cold! haha) We really could relax These pots handled the food and kept it warm forever!! It made the day relaxing I have other dutch/french ovens Lodge (that my mom preseasoned as an act of love before giving it to me) an old Martha S that does everything well but is a color only a guy could love My husband will not let me give it away even though I think it is a very very ugly color but it is a reliable workhorse The Le Creuset that I have does not have nearly the quality of enamelware The enamel is not as thick as my Chantal pots and pans and take much more work than my MS or Chantal They take a LONG time to clean OMG!! I do love my LC but I wish it had the enamel density of the Staub

The Staub pots were a sweet surprise The enamel is lovely and thick and glows Even the matte black enamel interior glows They are a breeze to clean Even my husband was surprised ( thinking it would reflect the long clean up effort like the other French pots) From what I have read- these french ovens were designed for the restaurant industry The black interior I treated as recommended with olive oil and slow low heat before using ( twice!) I did not use duck fat because that would be wasteful as I find duck too gamey ( My father was a hunter/fisher and we ate a wide variety of fish/fowl/etc) The lid fits beautifully and it came with little protective plastic u shaped pins which allow you to store with lids upside down with a barrier so no enamel touches other enamel The actual enamel itself is a work of art and elevates this cookware into something you would love to just stare at because the glaze is multidimensional The form is straightforward and does not take away from the delightful colorplay in the enamel I LOVE these pots and will be buying more soon They had a vision of what was needed ( 1)sturdy thick exterior glaze for easy cleaning 2) black matte interior enamel for even easier clean up 3) a great lid with a good seal and 4) functional little stalactite like forms from the lid 5) it is beautiful as well! Form & Function! Each pot takes a day to make... Hard to find that kind of workmanship...... IT really brings a little art moment into your kitchen

 "great looks and functionality" 2008-01-26
By miro (CO)
Do you gaze longingly at your pot while it happily does it's thing? You will if you get this one. It is like a little jewel on my stove. I got it for significantly cheaper from Will..Son.. (surprisingly) than the $150 listed here. The enamel seems much nicer than Le Creuset and I like the solid lid with basting spikes. I thought initially the rim around the top of the lid was just a cosmetic reminder of the way charcoal is held on the top of a classic dutch oven. I heard however it could be used to put ice water to encourage condensation. I also like the black enamel interior better since it seems easier to clean (perhaps by appearance). The lid knob is nice but a little small for the weight of the thing...you can use it to lift straight up but if you try to turn it sideways it will feel like it's cutting into your fingers.

"Staub 3.5 Quart Round Cocotte, Yellow" 2008-11-23
By
I've been looking for a porcelain over cast iron cook pot in this size for some time. I have a lot of Le Cruset, not just dutch ovens but other products as well, and one Staub dutch oven. These are the real work horses of my kitchen.

I love the black interior which requires less care than the white porcelain of Le Cruset. This is a good size to use as a steamer, a casserole, or a pot to reheat in. It's not large enough to act as a stock pot or soup pot, but it works well for reheating soup. And the yellow is a clear bright pretty yellow. The price was very good, and the package arrived very shortly after my order was placed.

 "I'd do it again" 2009-11-23
By D. E. Camp (Philadelphia, Pa)
I received my Staub Cocotte on Wednesday, a work day, and couldn't wait until my next day off. The first thing that I did was go the the Chinese market and purchase a suitable chicken for braising. I find the Chinese market excellent for fresh, older chickens that are flavorful and suitable for soup and braising. Anyway I prepped my new pot, dropped my chicken in with some vegetables and stuck it in the oven at 300 degrees. Four hours later I had this flavorful, slightly chewy, moist chicken for dinner. The leftovers were excellent in the chicken pot pie the next day. My wife is anxious to try it out for sauerkraut. Yes, it's an expensive pot but I'd do it again...

"All that and a "No Knead" Artsan Bread Baker too!" 2009-01-23
By Chef Ed (Los Gatos, CA USA)
I am an American who became a chef in Paris, France, and fell in love with Le Creuset enameled cast iron cookery over a decade before the first Staub "La Cocotte" was cast. Staub innovations deliver the cooking performance, commercial durability, and increasingly easy cleanup that clearly surpassed Le Creuset. The "Almost No Knead" artisan quality bread touted by the New York Times and Cooks Illustrated bakes up better in the oval cocotte. The even heating quality of Staub cast iron and the superior tight fitting lid design allow this easy-to-make, healthier, crusty, yeast raised "slack dough" bread rival bread baked in expensive steam injected commercial ovens that sells for over $4 a loaf! The oval shape and size of this cocotte bakes a large loaf that slices well. Granted, cast iron is heavy... but heavy is the secret to spectacular cooking (and baking) as Staub interior enamel is the secret to easier cleanup with prolonged use. My home kitchen now includes a bevy of Staub bargains bought on Amazon.com and delivered fast and free on Amazon Prime. For a consummate shopper like yours truly, there is nothing quite like buying the best products at the best price from the best web merchant! -Chef Ed

 "Very pleased" 2009-01-17
By Rebelclipper (FL, USA)
This product has met all our expectation. Its quality is superior and its exterior look is beatuiful. Whe spent 3 weeks in France this summer and my son used the cast iron cookware and was hooked. He used the LeCreuset brand so that is what he wanted. After much research I felt the Staub cookware was a better product so I purchase it for him. I was right. He is much happy with the quality and proformance of the Staub cookware both are very good products but the Staub is a step above. I will continue to buy him more of this cookware. He is a gourmet and takes his cooking seriously. I reap the benefits

"I love the Staub cast iron" 2008-10-25
By Judy L. (Marengo, Il. USA)
I have had this Staub dutch oven for a couple of months and have found so many uses for it. I have gotten rid of all my slow cookers and use this dutch oven instead. I have made pot roasts a couple of times and they come out so tender. Everything can be done in one pot because this dutch oven can be used on the stove and in the oven. You can saute onions and garlic and then brown the meat. After adding water, you can bring it to a boil before putting it into the oven. When potatoes and vegetables are added later, you can bring it to a boil again before returning it to the oven. This saves time in getting the water back to temperature after adding ingredients. I've also made some wonderful soups and stews using this dutch oven.

Cleanup is a breeze. Just rinse with hot water and wipe with a dish rag. Nothing sticks.

 "Staub a True Competitor" 2007-02-06
By T. Smith (California wine country)
I have hoped to find a true competitor to Le Creuset for years, one that was more affordable and of the same quality. Staub fills the bill, and fills it with style. This cocotte is large enough to accomodate a good-sized chicken, and is perfect for slow-cooked stews and braises. The interior coating is easy to clean and effectively non-stick. While its weight may be a deterrent for some, it is so attractive that it can be left on the stovetop or on a counter for easy access. It is my best purchase of the year and I look forward to using it for years to come.

 "cookware lust" 2009-05-02
By girlygil (Silicon Valley, CA)
I've owned Le Crueset pots before, and while they are wonderful, I fell in deep lust with this Staub 8qt in Grenadine while browsing at Sur La Table one day. I held out for a long time, but with a recent amazon gift card windfall for my birthday decided to go ahead and splurge. I love this pot, cooked steak soup, white bean soup and a roast in the past week and they all tasted 10x better than they normally do. This is my favorite kitchen item and I have a feeling this will be come my go to pot for everything from boiling potatoes to making slow braised ribs. If you are thinking about purchasing this, don't hesitate like I did = wishing I'd bought it years ago!

 "Staub problem" 2009-03-06
By Leda D. Kim
I bought an 8 qt round Staub a while back and loved it until today. I was cooking a stew on the stove, something I've done hundreds of times, when I heard a 'pop' and all of a sudden liquid spilled all over the stove top. Upon examination, I found a crack from the top of the pot and along the bottom! I've used this pan and have many Le Creusets (which have never given me any problems) many times. For a pan that cost me nearly $300, I'm beyond upset that it has not held up at all. I would not recommend this brand at all.

"This is one great Dutch oven!" 2009-01-06
By Evelyn Z. Wilson (Topeka, KS USA)
I'm not much of a cook, but my new Staub pot makes me look great! The flavors of the food just blend together in ways that make the one-pot dishes taste sooooooo good. Because this pot is so pretty, you just set it on the table and serve, which saves work after dinner. My husband and I bought it for each other for Christmas. His first comment when he lifted the lid out of the box was "You bought us a manhole cover?!" I said, disapprovingly, "Obviously, you have not noticed the basting spikes." I guess it does give you an idea about how heavy this pot is, even without anything in it. Anyway, I love it.

 "THE BEST!" 2009-01-06
By Jennifer Bishop (Columbus, OH USA)
I love love love my Staub enameled cast iron pot! I bought mine at a retail store that was discontinuing the sunflower color and I got a great deal on it. I used it for the first time today and I am very pleased. I would not want to go larger or it wouldn't fit in my sink to clean. This size gives me a lot of versatility. I just cooked 3.5 pounds of braised short ribs with veggies and potatoes. I only used salt and pepper. When they came out they were the most delicious and moist! The lid really self bastes and there are no drips when you open up the pot. You don't have to be exact with the timing. Also, you should cook at lower temperatures because the pot retains heat so well.

I could have fit more in the pot or maybe less. It is 2 nights dinner for 2 small adults and 2 toddlers. This is the perfect size if you ever plan on cooking for the holidays or roasting a chicken, etc. I do plan on getting a 4 quart, but this can be used for most things. For leftovers, just put in the fridge and reheat on the stove top.

This is one heavy beast, but me (105lb) have no trouble lifting it full. You must be careful removing anything hot from the oven. Did I mention it is absolutely gorgeous! I ordered a Le Creuset and ended up returning it. It seemed like half the pot of the Staub. The LC was thinner and the lid didn't seal very well. The handles were smaller and the pot wasn't as beautiful. There were way too many irregularities in the enamel as well.

I wanted to like the LC, but I have been converted. My husband saw it as well and he liked this one much more.

 "Outstanding, essential piece" 2009-09-28
By N. Goff (Virginia)
I've been cooking on this french oven for 5 months. The size is perfect for a medium sized chicken, family-sized soups and stews.

I can say the main difference between this pot and the LC pots is that the greater thickness and weight of the Staub pot yields more heat retention. Foods stay HOT even one hour after being out of the stove. This has been tremendously convenient, not to mention it has a very nice (grenadine red) enamel-glazed exterior; which is hard to find in other brands, and has kept free of chips and scrapes. The interior has been easy to clean and prolonged soaking is unnecessary, also, you won't worry about damaging the interior as you do with the enameled interior pots.

I did think the lid's handle was a bit small for such a heavy lid. Although it's sturdy, a larger diameter handle would help feel more secure.

Very sturdy, hard-working, yet attractive. Even for the price, it will not disappoint.

 "Best In Browning Food!" 2009-06-28
By H. Baril (Beverly Hills, CA United States)
The Staub 5-Quart Dutch Oven does the job where LeCreuset leaves off ... that is, if you want to deeply brown your meats before slow-cooking them. However, mind your liquids carefully -- this terrific pot absorbs very quickly, and unattended items can burn.

Having shopped around extensively for a dutch oven I can say the $111 I paid is a great price for this product. It performs as promised - food cooks up moist and tender. I've made several chicken dishes in it and stuffing for Thanksgiving. It goes from stovetop to oven to table and it cleans up easily, making it really convenient to use.

We bought a few of these for gifts for close friends. One of the pots and one of the lids had unacceptable defects in the enamel finish so we ended up making some returns. Not sure how the quality defects managed to make it past the factory door.

The remaining items were in good condition and will be well appreciated by the recipients, I'm sure.

I had been interested in purchasing a dutch oven but really did not know which brand to purchase.

When a shopping alert on simplyrecipes.com came up for the Staub 5 quart Round Cocotte in Yellow I grabbed it! It was one of the best purchases ever! I love the "french" oven for its superior quality and excellent ease of cleaning. The black inside also is a plus as I know that other brand has a white inside that gets colored with whatever you've cooked. I highly recommend this product. I would suggest you purchase a larger size than the 5 qt

"tiny but only $5 more than Le Creuset's stoneware ramekin" 2007-01-16
By Dwight (USA)
How's that for a spendthrift rationalization? I'm not purchasing this because of issues with spendthriftiness and hoarding.

I think the brass knob with the yellow is so pretty and cheerful like a little bird. It will really dress up the table and usually I don't care but I love the combination of sturdiness and tininess.

The mini cocottes sold faster than the 2 quart size. I know that some expensive restaurants are using them but I wonder what is most effectively served in them. A truly delectable glutinous rice recipe? Individual pots of melted cheese? Buy one and serve melted peanut butter at breakfast or for children's sandwiches replacing the purchase of a diablo? How about dissolving raspberry jam for a quick thin sauce to pour over aebleskiver?

1 hour at 350 degrees F if you are scared to put this on a hot stove:

Cheese Fondu

(From Gourmet Magazine 1966 & 2001)

1 garlic clove, halved crosswise

1 1/2 cups dry white wine

1 Tbsp cornstarch

2 tsp kirsch

1/2 lb Emmental cheese, coarsely grated (2 cups)

1/2 lb Gruyere cheese, coarsely grated (2 cups)

CHEDDAR SOUFFLE

(Start to finish 40 minutes)

5 tablespoons butter, plus 2 teaspoons

1/2 cup finely grated Parmesan cheese

3/4 cup rice flour

2 cups whole milk

1 1/2 cups shredded Cheddar cheese

6 egg yolks

2 teaspoons fresh thyme

2 teaspoons salt

2 pinches nutmeg

4 egg whites Preheat oven to 375 degrees. Use the 5 tablespoons of butter to grease six 6-ounce ramekins. Dust the insides of the ramekins with the Parmesan cheese, wiping away an excess from around the rim.

In a small saucepan over a medium heat, melt the remaining butter. Add the rice flour and cook, stirring constantly, 2 to 3 minutes.

Add the milk and whisk until thick and incorporated, about 5 minutes. Add the Cheddar cheese, egg yolks, thyme, salt and nutmeg, stirring until the cheese is melted. Remove from the heat and set aside.

Use a mixer with the whisk attachment, whip the egg whites until they form stiff peaks, about 3 minutes. Using a rubber spatula, carefully fold the egg whites into the cheese and milk mixture until just incorporated.

Spoon the mixture into the prepared ramekins, leaving 1/4-inch space at the top. Bake 25 to 30 minutes, or until golden brown.

Makes 6 servings.

(Recipe from Dina Altieri, instructor at the New England Culinary Institute in Montpelier, Vt.)

 "Beautiful, useful pot" 2009-07-06
By Hornbeam (Boston, MA)
This is a wonderful pot, as beautiful as it is useful. Although large enough for a big dish, it's also good for moderate-sized recipes, where for example you fry onions and have to stir a lot -- the ingredients don't overflow the pot or splash out. Seasoning it was a snap: just rub in a bit of cooking oil. Because it heats up well on low heat, there's less danger of burning the food. And of course, this glossy red pot looks great! The interior finish is black enamel; has to be treated carefully (wooden or plastic utensils), but can't, I assume, discolor or show scratches. The only drawback for some may be its weight: the pot alone weighs 8 pounds and the lid 5 pounds. Add some contents and you have a hefty piece, which might be too much for some to lift out, hot, from the oven.

No seasoning is required for enameled cast iron and it will not react to acidic foods.
