I am used to cooking pancakes in a non-stick aluminum pan. We're having trouble adjusting to the black iron pan. I know that black iron is better with more even heat and is also nonstick once well seasoned. So far we've used the pan 3 times and are still getting 'stuck' though the last time was much better using a good bit of oil between pancakes. I can easily see this becoming our favorite pan. However, if you like to roll the pan around to spread your batter for crepe pancakes, this pan is kinda heavy but it can still be done.
